Peanut free and nut free recipes

I freely admit: I am not the world’s greatest cook. One of my friends still chortles at the memory of my university signature dish of pasta and mayonnaise (with a sprinkling of ground black pepper, to add that certain touch of class). However, since weaning my children (and particularly since my son’s peanut allergy diagnosis), I have had to get my act together.

I appreciate that, to those who have to cater for multiple food allergies, finding recipes which are only peanut and nut free may seem like child’s play. However, if, like me, you need a bit of inspiration when cooking from scratch (and maybe some cookery skills guidance too), I thoroughly recommend the fantastic cookeryskills website. This features loads of simple recipes and shows you how to put together the “mise en place” (namely getting everything set up and all the ingredients prepared before you start). Best of all, there are videos showing you what to do – from slicing an onion to poaching chicken.

Here are three peanut- and nut-free recipes from cookeryskills that you might like to try (and that even I can cook!).

1. Cottage pie

Ingredients

250g lean minced beef
75g onion
50g carrot
50g mushrooms
1 tablespoon tomato purée
Approx. 125ml beef stock
10g plain flour
Vegetable oil, to shallow fry
Sea salt / pepper
Approx. 300g mash potato mix (without cream, butter or milk)
Small egg, for egg wash
Mushroom sauce, as accompaniment

2. Penne pasta with roasted vegetables

Ingredients

300g penne
1 red pepper
1 yellow pepper
2 courgettes
1 red onion
1 medium-sized butternut squash
150g baby tomatoes
2 garlic cloves
2 sprigs rosemary
4 to 5 tablespoons olive oil
1 teaspoon dried oregano
Approx 5 to 6 tablespoons tomato sauce
10g flat leaf parsley
Sea salt / pepper

3. Anzac biscuits

Ingredients

60g golden syrup
150g butter
120g caster sugar
120g rolled oats
120g plain flour
2 teaspoons bicarbonate soda
2 teaspoons whiskey (optional)
